This easy sweetcorn fritters recipe is one you'll use again and again! Perfect for when the fridge is almost bare but you do have a bag of frozen sweetcorn! They're great for kids as well as an easy light meal for the whole family.

Yes! Sweetcorn fritters are great recipe for kids and adults. I love them with salad for a light lunch and then I just add some potato wedges or a grain based salad to make a more filling meal if I'm eating them for dinner.

I also like to add some stronger flavours to make them just as tempting for adults as they are for kids. I would not say no to freshly sliced chilli peppers on or IN these sweetcorn fritters!

If you love quick and easy meals then this recipe for simple corn fritters is ideal. It takes almost no time to prepare and they can even be made in advance.

To make these simple sweetcorn fritters with spring onions you'll need:

  • Flour - I used plain white flour (all purpose flour) but you can use part wholemeal flour which will add more fibre and make them a little healthier
  • Baking powder - This helps the fritters to rise a little, making the texture lighter and fluffier.
  • Milk - I use semi-skimmed milk as that's what we use in our house but you can use whole or skimmed milk. If you want to make them dairy-free you can use a plant-based milk such as oat milk.
  • Egg
  • Sweetcorn - I use frozen sweetcorn. I like the taste better than canned sweetcorn but you can use canned if you prefer. If you use frozen, there's no need to defrost it first. You can add the frozen sweetcorn directly into the fritter batter.
  • Spring onions - I use the white and green parts of the spring onion.
  • Seasoning - I add a pinch ofblack pepper andsalt. Of course, if you are making these for young children you may prefer to leave out the salt.

How to make easy sweetcorn fritters

Do check out the recipe card further down the post for full details. Basically it's a matter of whisking up all the ingredients minus the sweetcorn and spring onions.

Once you have a smooth batter, stir in the corn and spring onions.

Heat a little oil in a large frying pan and add spoonfuls of the batter. Fry for about 2 minutes on each side over a medium heat until you have light fluffy golden brown fritters.

How can you adapt this easy recipe for sweetcorn fritters?

These are loads of ways you can adapt the recipe for fritters. Just use this simple fritter recipe as a starting point and then make a few changes.

You can swap the sweetcorn for another vegetable. Green vegetables work well such as peas, asparagus or green beans. Just dice any long vegetables first.

If you're using a vegetable that takes longer to cook then parboil it first too. Diced butternut squash is also delicious.

You can also add diced chorizo or bacon. Just fry them first until crispy and add them to the batter.

Or how about making them cheesy? Add some diced cheddar, feta or goats cheese. Or top them with grated cheese when serving.

Can you substitute the spring onion in these fritters?

I love to use spring onion in these but regular onions work well too. You can even use leeks as I have in these leek pancakes with spinach, kale and ricotta.

Why not make these sweetcorn fritters spicy?

You know I love spicy foods and one way of livening up these simple corn fritters recipe is to add some chilli heat. If you like jalapenos then why not add a few? Alternatively you could add a little freshly sliced chilli pepper.

If you don't want too much heat but love spices then why not add some spices? I love a little curry powder in my fritters.

Another way of adding some heat is to serve them drizzled with hot sauce or with a spicy chutney, as I have in these pictures!

Herbs make a lovely addition to sweetcorn fritters

I just added a few sliced spring onions to this fritter recipe but another way of adding flavour is to add some herbs. You could use chives or parsley.

Are sweetcorn fritters good for kids?

Yes, these sweetcorn fritters are the perfect recipe for kids including toddlers. They're very child friendly, easy to eat and contain veggies! Although it is possible for picky eaters to pick the corn out, kernel by kernel! I've discovered that the hard way!

If you are making them for very young children, just consider using a little less salt in the fritter batter. You can always add seasoning on top for adults. I like to eat them with hot sauce which adds plenty of flavour.

What can you serve with sweetcorn fritters?

It depends who you are serving them too. I know some kids love baked beans with fritters. Personally I like them with all kinds of salad. They are lovely with this harissa carrot salador this tomato and olive couscous salad.

You can also serve these sweetcorn fritters topped with a poached or fried egg. And if you do that, definitely a drizzle or sriracha or your hot sauce of choice!

How long do they stay fresh?

You can store these fritters in the fridge for 24 hours but then it's best to freeze them. Stack them on top of one another and wrap them in clingfilm before putting in a freezer bag. It's best to use them within 4 months.

How to reheat these sweetcorn fritters

You can reheat fritters in a few different ways. If you have an air fryer, they will reheat in about 3-4 minutes directly from frozen. I set the temperature to 180C. You can also put them in the oven for about 5 minutes or microwave them.

You can also pop them in the toaster to defrost.

Personally, I find the microwave can make them a little soggy so I prefer the toaster or air fryer method of reheating.

Can you eat them cold?

Yes you can! They are delicious hot or cold. Because they are great cold too, why not put them in a packed lunch or picnic?

Can you make them gluten free?

Yes you can. Just use a different kind of flour. I think chickpea flour (gram flour) works really well as a substitute. If you have a gluten free flour that you use regularly it should work as a simple swap.

Can you make them dairy free?

Yes you can. Just use a plant based milk instead of cows milk. I think oat milk works partiularly well in fritters. You could also use coconut milk, soya milk or rice milk.

Can you make them egg free?

Yes, if you want eggless fritters, just leave out the egg. It helps to bind them together but they are still fine without it.

  • 100 g plain flour
  • 1 teaspoon baking powder
  • 150 ml milk
  • 1 egg
  • 140 g sweetcorn
  • 2 spring onions finely sliced
  • pinch black pepper
  • pinch salt optional

Instructions

  • Beat the egg, milk and flour together to make a batter. Then add the sweetcorn, spring onion and seasoning.

  • Heat a little oil in a frying pan. When it is hot, add spoonfuls of the batter. Cook for about 1-2 minutes on each side.

  • Serve with lemon, salsa, tomato or a chilli sauce.
