What a wonderful roundup, Katie! Your sautéed kale looks incredible…good thing I’m running to TJs tomorrow so I can pick up some kale!

I just posted a green Pesto Hummus today! It’s a healthier take on the classic Italian herb sauce! http://www.fooduzzi.com/2015/03/pesto-hummus/

Wow, nice roundup! I can’t believe some of these are under 200 calories. Of course I would have to have multiple servings totally ruining the 200 calorie thing though : )

I like St. Patricks day because it gives me an excuse to drink Guinness and add it to everything…at least that is what I tell myself.

Just made the mint Nanaimo bars, so amazing! And I have to say, bless your American heart for featuring a Canadian dessert. 🙂 I searched a few recipes for healthified Nanaimo bars, and I was surprised how few there were. Delicious, my dear, loved by traditional Nanaimo haters and lovers, because it’s not cloyingly sweet but still rich.

I really couldn’t contain myself after seeing all these mouth water pictures of the desserts. What is more astounding is that all these desserts look immensely rich yet are all under 100 calories. I couldn’t help smack my lips after seeing the chocolate fudge truffle, the gooey brownie and mint chocolate fudge pie. Recipes for any one of them would make my day!
